RestArt Forum 2018: exciting and large-scale event
October, 26 – 27 in Pochayna Event Hall, Kiev there was hold a unique restaurant forum where world known restaurant speakers talked about trends, actual news, told the audience about empires creation from one restaurant to a chain, kitchen management, interesting conceptions creation, restaurants profitability and business capitalization.
Performances of the first day:
Albert Adria speaking on the topic: “From kitchen management to world best restaurants creation”
Cases: El Bulli, Tickets, el Nino Viejo, Hoja Santa, Bodega 1900, Pakta, Enigma, Heart.
Live stream from New-York city – Doug Satzman: “Empires building. From one restaurant to a chain.”
Cases: Starbucks, Le Pain Quotidien, Joe Coffee Company.
Alan Yau speaking on the topic: “Boutique restaurants. Restaurants as a business. Formats, profitability, capitalization.”
Cases: Wagamama, Hakkasan, Busaba Eathai, Yauatcha, Princi, Park Chinois, Babaji, Yamabahce.
Simon Taylor speaking on the topic: “Rules of profitable restaurant branding”
Cases: Conde Nast Restaurants, Bacardi, Swipe Right Experience
At the end of the first exciting day there was a discussion panel where all the speakers shared their experience about their mistakes and challenges that lead to success.
The next day RestArt program was intense. There were several interesting and different activities on the territory of more than 2000 sq.m.: seminars, workshops with the speakers of the first day and world known chef master-classes.
At Chef Lab master-classes were hold by:
Ben Orpwood / Gordon Ramsay Group – “Trends in the plate – from vegetables to dessert”
Reginald Ioos / Le Cordon Bleu – Lecture and master-class “Poultry on the menu”
At Manager Lab participants could privately talk to speakers in small groups:
Simon Taylor – Successful restaurants branding: trends, world brands, creation, development, adaptation and monetization.
Albert Adria – conversation on equal terms – “Chef is an inspired creator or tough-minded manager”.
Alan Yau – conversation on equal terms – “ Trends evaluation and adaptation to your guest”.
At the end of each session there was a discussion of given topic.
This year there were 2290 guests from Ukraine, CIS and European countries at RestArt Forum.
Many restaurateurs admitted that this event is much more significant and bigger than the events that were hold earlier in the country.
RestArt Forum became great international event that improves the fact that Ukrainian restaurant society pretends to develop and to get closer to world level in its innovations, technologies and methodology.
